Vegan Chocolate Chip Cookies

2 cups of unbleached all-purpose flour
1 tsp baking powder
1 tsp sea salt

1 cup of Earth Balance Butter (softened, not melted)
3/4 cup of Vegan Cane Sugar
3/4 cup of Vegan Brown Sugar (or sub with Cane Sugar if you can't find a vegan version of the brown sugar - you can add a little less sugar if you would like)
1 tsp Vanilla
Egg Replacer for 2 eggs

2 cups of Semi-sweet Chocolate Chips

1. Mix the flour, baking powder and sea salt in a bowl and set aside.

2. Mix the butter, egg replacer, sugars and vanilla together with a fork.

3. Slowly add the flour mixture to the wet ingredients.

4. Mix in chocolate chips

5. Roll mixture into loose balls and place onto an ungreased cookie sheet.

6. Bake in a pre-heated 375 degree oven for about 10 minutes or so.

7. Let cool a little before removing from cookie sheet.

Makes about 16 medium sized cookies.
