Kelbotsian Coconut Corn Chowdah

Chapter One "Shuck You"
Start out by shucking the corn and skinning the kernels off.

Don't use frozen corn or it will be as bland an unexciting as my last relationship.
Then get your can of coconut milk out and pour it in. Don't forget to lick the lid!

Mix it up together and toss it on the stove on low to medium heat.
Chop up and add the following veggies;



(actually 3 or 4 Yukon Gold spuds but i forgot to take the pic in time;) )
Add this and a cup of water for lube.

Then go out to your herb tower and pick some things, eat them, make a bad face and decide the chives and thyme will work. Also you can add garlic if you are a fan.

At this point bring it to a boil, give it a good stir, lower it to a simmer and cover it up. It will look somewhat like this-
Then go start your laundry and do the dishes and watch this movie-

(You will not like the movie although you are a fan of Sarah Polley and have been ever since she played "Ramona The Brat" and went on to play in your favorite movie of all time "The Adventures Of Baron Munchausen" which you tried to find last night at Blockbuster only to find that they don't carry it. Who the fuck doesn't carry it?)
Half way through the movie check your laundry and check the soup and decide that the potatoes being cooked all the way through isn't really all that important. It should look like this-

Let it simmer for a few hours and add salt and pepper to taste. This will be your food for the next 2 days. Enjoy!

Serving Suggestion: Use a bowl as opposed to a plate.

Yay!!! And Bacos are vegan too so next time you can try some. My mom adds cheese to it and likes it that way. I add a bit of earth balance too :) I don't know why and I left it out of the recipe because it doesn't seem necessary but it's good with it... I don't know what it does or if it helps or just makes it greasier...

And I'll have to try dill next time- how was that?

I like the dill. Really good with corn! Hubby appreciated the addition of the bacos. I think the earth balance just made it a little richer maybe. But then again all I had was light coconut milk, so probably needed the addition.

I probably didn't need to write vegan on it because I live with Jeff and he is very, very respectful of others things but I have another roommate and have had a few others that aren't as much...

And no, I don't shake it up first- it mixes up fine when I stir it in. :)
