Okay..you are in the mood for chips and it is not advisable to purchase those Olestra filled chips so what do you do? ...lol..make chips yourself of course.

Yes it means you have to put energy and time into making them but it is much better than eating those commercial chips.

My boys Looove these! I had to try something as they love chips and it is not good for them.

Using a mandoline or vegetable peeler, if you're patient, thinly slice beets, yams, potatoes, toss them with a tiny bit of oil, then bake them in a 400 degree oven until crisp – about 20 minutes or so, turning once or twice. It is best if you can use organic.

Remove from the oven, cool and season. I tossed my baked veggie chips with sea salt, pepper and nutritional yeast. Much healthier and more colorful than potato chips, right? Unfortunately, the beets lose their vibrant red color in the baking process. But what they lose in color, they make up for in flavor.

Variations
You can use practically any firm vegetable you like to make these chips. Other options include carrots, parsnips, sweet potatoes and turnips. Look to your personal preferences, and explore what's in season.

You can also play with the seasoning quite a bit. Add chili powder, Indian spices, smoked paprika, cumin, or really anything that strikes your fancy. It's a good way to get back in touch with your overflowing spice cabinet. Or keep it simple and just add sea salt and pepper.

just tried these! only did potato and carrot! but just wanted to test them before i did them as snacks for new years eve! they were good, the only reason i've 4 stared them is that i think i cut them a little too thick, some of them didn't cook properly, but i will revise my vote when i get it right! ha!
