Strawberry and Rhubarb Sorbet with Mint
Ingredients:
2 1/4 pounds rhubarb -- trimmed, sliced
2 1/2 cups sugar
2 teaspoons vanilla extract
1 cup water
2 pints strawberries -- hulled and sliced
1 1/2 cups orange juice
2 tablespoons fresh mint -- minced
Procedure:
In a non-aluminum saucepan, combine the rhubarb, the sugar, the vanilla extract and the water. Bring to a boil over high heat, reduce the heat to a simmer and cook for 20 minutes. The rhubarb should be very tender and falling apart. Carefully transfer the rhubarb to a food processor or blender and puree until smooth. You may need to do this in batches and begin by pulsing or flicking the on and off switch of the blender. Transfer the rhubarb puree to a bowl.
Add the strawberries and orange juice to the processor or blender and pulse or blend until smooth. Combine the strawberries with the rhubarb. Chill the mixture in a refrigerator until thoroughly cool. This may be done overnight.
Freeze the mixture in an ice cream maker according to the manufacturer's directions. Add the mint while the mixture is freezing. Store in an airtight container in the freezer for at least four hours or overnight before using.

Born and raised in a series of small towns in Upstate NY. I moved to NYC for grad school. I was terrified at first haha. I'm getting used to it now. I am doing pretty good. Getting ready to leave for a week in North Carolina. I actually have been dating a guy that I met on vegifide for a while now who lives there. We do the back and forth thing, it sucks sometimes but it's worth it. How have you been? Anything new going on?
why disappointed? don't be. we all do things our own way. over the years, i've helped convert many folk to a vegan lifestyle. we all have the same goal in mind. just different ways of achieving it. so, don't be disappointed with me. I'm definitely not with you. You rock. You're hardcore and that's needed. I just wouldn't expect that from many folk. For instance, on here. Very few people took part in our conversations. i believe that's because it's a hard topic. I think there's lots of people on here who believe in passivity. I think it will take all the different types to make the change we want and need. phew. i tired now. so, if i've completely missed the mark in this conversation, sorry. if so, disregard.
