Simple Gnocchi Recipe

Categories: EntreesGnocchi is reeeeeeally yummy! They are small potato dumplings that are usually served with some sort of sauce. There are eggs in this recipe, so I guess it depends on how strict of a veg head you are. You will need: 4 Large Potatoes 1 Cup of flour 1/2 table spoon salt 1/2 table spoon pepper 1/3 cup parmisan cheese 3 egg yolks 1. Bake potatoes in the oven until slightly over cooked. 2. Cool potatoes until they are cool enough to handle. 3. Peel potatoes. 4. Smash potatoes REALLY good. You don't want any potato chunks in your gnocchi. 5. Add egg yolks and fold in with hands really well. 6. Add half of the four and fold in slowly. 7. Little by little add the rest of the flour. Continue folding. 8. Add salt, pepper and parmisan cheese. 9. Keep folding. 10. Your going to want to test it to make sure it is firm enough, so take a small peice of your potato dough and roll it in a ball. If it holds itself together then it is ready. 11. Roll small pieces (about 1/2 inch) of dough into balls, push your thumb into the center to make an inprint. 12. Once you have done that you need to let them cool for about 15 minutes. Then you can bring a pot of water to a boil and... 13. COOK! You can cook your gnocchi, let them cook for about 2 minutes after they start to float. Add your favorite sauce and... WHALA!!! A lovely, home made, italian meal :D ENJOY!!!
